PICKED GARLIC SCAPES
1 pound garlic scapes
1 tsp dill seed per jar
1/2 tsp whole black peppercorns per jar
1.5 cups apple cider vinegar
1.5 cups water
2 tbsp pickling salt
Trim the blossoms off the scapes and pack into a sterilized jar with dill and black peppercorns.​
Combine vinegar, water and pickling salt and bring to a boil. Pour brine over scapes, allowing 1/2 inch headspace.
Wipe the rim, apply lid and ring and process for 10 minutes.
Allow at least 2 weeks to cure before eating.
Can add coriander or chili flakes.

GARLIC TASTING DIPPING SAUCE

1/2 cup plain yogurt
1/2 cup mayonnaise
1 tbsp apple cider vinegar
1/2 tsp salt
2 cloves garlic or to taste
This simple sauce allows you to try different garlic varieties to compare their flavour profile.​ Try with bread or veggies.
GARLIC SCAPE PESTO
1 pound garlic scapes
1 1/4 cups grated parmesan cheese
1 cup olive oil
1 tbsp lemon juice
Ground pepper to taste
Blend in a food processor until smooth. Can be frozen for longer storage.
